Mrs. Claus Christmas Soup

Ingredients:

1 large can V-8 juice (46 fl. oz.)
1 can beef consomme (11 oz)
2 bay leaves
4 cloves
Dash of Worchestershire sauce
Dash of Tabasco sauce

Simmer all ingredients for 1 hour. Serve hot in demitasse cups.

Serves 8.

Father Christmas Salad

Christmas Morning

In traditional Christmas colors of green, white and red, this is full of seasonal good cheer.

Ingredients

1 can (15 oz) (425 g) lychees in heavy
     syrup
1 can (15 oz) (425 g) stoneless red cherries
     in syrup
4 tablespoons of Cointreau or Kirsch
1/2 oz (15 g) unsalted pistachio nuts
Boiling water

  1. Tip both fruits, with syrup, into a large dish; glass for preference so that the colors can show through.
  2. Add liquor and toss gently to mix.
  3. Blanch pistachios by covering with boiling water and leaving for one (1) minute. Drain and rinse under cold water.
  4. Slide off skins then finely chop. Sprinkle over top of salad. Cover and refrigerate at least three (3) hours before serving.

Potato Filling

This filling can be used with turkey and ham.

Ingredients

3 lbs whole potatoes
2-3 Tablespoons milk, as needed
1 stick butter or margarine
2 stalks celery, chopped
1 small onion, chopped
3 slices of firm bread, cubed
2 large eggs


Santa

First, peel and boil the potatoes, mashing with milk. Then melt one stick margarine in a large skillet. Saute (but do not brown), celery and onion until soft and onion is golden. Add bread cubes and mix in well (add more margarine if needed); continue sauteeing until bread is golden. Beat eggs one at a time into the mashed potatoes; mix in onions, celery and bread; blend well. Place in casserole dish and dot with margarine and bake in 350°F oven until the top is puffy and golden (about 1/2 hour if mixture is warm when goes into oven, about 1 hour if taken from the refrigerator).

Creamy Sweet Potatoes

Ingredients

3 cups Mashed sweet potatoes
1 cup white sugar (may use less)
2 eggs
1 teaspoon vanilla
1 stick melted butter or margarine

Mix and put in buttered baking dish. Mix the following together and add to top of sweet potatoes:

1 cup brown sugar
1/3 cup flour
1cup finely chopped pecans
1/3 cup melted butter

Bake 30 minutes in 350°F degree oven.

Orange Praline Yams



Ingredients

Two 2-lb 8oz cans of yams, drained,
        or 4 lbs. cooked, peeled fresh
2/3 cup orange juice
1 Tablespoon grated orange rind
5 Tablespoons brandy or rum
2 teaspoons salt
freshly ground pepper to taste
1 teaspoons ground ginger
4 Tablespoons butter, melted
1/3 cup light or golden brown sugar, packed
3 egg yolks

Praline topping:

2/3 cup light or golden brown sugar
1 stick butter, melted
1 cup chopped pecans
1 teaspoon cinnamon

Skating in Central Park

Beat yams till smooth. Add rest of ingredients and beat till smooth. Place in greased casserole and smooth top. Mix and spread the praline topping evenly over top of casserole. Bake 350°F for 45-50 min. till golden brown and bubbly.

Note: Use a 12" shallow quiche dish. The night before, make sweet potato part. Recipe may be doubled or tripled, but do not make in a deeper dish or the ratio between potatoes and topping will be off.   Makes 8 to 12 servings.
